Great little pasta shop in downtown Saratoga. They are from the owners of Plumed Horse, and even have the same focaccia bread (which is outstanding). From what I could tell, they don't really have a FOH, but rather do a mandatory 15% tip and the chefs are the ones bringing out your food/checking if everything is okay - which is super cool. You can tell this is a place that cares about both the food and the people making it.

There are many things to love about this place: the atmosphere in a nice neighborhood, the flat service fee, and most importantly, the spirit of the people who make and serve food. That definitely reflects into the quality of food as well. The pasta is perfectly cooked, not too chewy or lack texture. The foccacia captivated us. The cannoli fills with dessert cheese rather than custard so it is dense. With all good things being said, I would like to highlight two points: (1) be careful with the bread. It is tempting. Don't eat too much of it otherwise you will be too full to enjoy the rest of the meal. (2) The pasta with uni cream is a bit too bitter to my taste. I rather recommend the mushroom one with truffle. Very bold and flavorful.

I mistakenly ordered diet coke ($4) instead of a regular. They refused to take it back and replace with a regular one. Ok fine, my mistake and I own it. Food is good. You place your order at the counter and they give you your drinks and … More water that you take to your table yourself. When the food is ready they bring it to your table. If you want anything on your pasta (salt, pepper, chill) you have to go to the counter and ask. Service is basically non existent here. Yet they automatically add 15% to all bills as a “service charge”. Even takeout orders have 10% extra for “service”. There’s hardly any service when dining in and there’s definitely no service at all when you order takeout. I see forced tips or service charges practice as an unfair and morally wrong. Especially when there’s no service provided.

The pasta Armellino is a must try if you like cream pasta and seafood. The uni flavor is subtle but there and the sauce is so perfectly creamy! Such an elevated cream pasta. The fettuccine noodles were very fresh and delicious but they were a bit brittle (probably because I took it home ~20mins)
The bucatini was super salty—not sure if it was just mine but it was a bit much with all the salt and spice and pepperiness of the arugula. Don’t think I’d get the bucatini again. Next time I want to try the mushroom truffle as well!

Pasta Armellino is located in the heart of downtown Saratoga, and as such there is no designated parking. The restaurant was nice, modern, bright, and airy, and though the place was busy, I was still able to find a table to sit at. The … More draft root beer I had was very nice and was rich in flavor. The bread, on the other hand, was small and not very impressive; I wouldn’t recommend it. I had the “Impossible” Bolognese Pasta. The meat did actually taste like real meat, and the pasta was nice and firm. The taste of the dish was light and fresh, which I enjoyed.
Overall, I was really impressed with Pasta Armellino. The only criticism I have is that I would like to see more selection of pastas, as there are only five or so dishes to choose from. I would also like to see a bit more pasta, as the dishes are on the small side. Other than that, I would highly recommend anybody looking for a nice bowl of pasta to check out Pasta Armellino. -
